Wellness Gypsy Protein Balls

1 cup cashew butter*
1/4 cup pumpkin seeds(ground)
1/4 cup flax seeds
1/4 cup chia seeds(ground)
1/4 cup chocolate chips(optional)
1/4 cup dried tart cherries(no sugar added)
maple syrup(optional)
1 tsp vanilla extract
1/2 tsp Real Salt

Mix all ingredients into a large bowl(I just use my hands and get messy with it, if you have kids this is really fun for them!). Once everything is mixed well, roll into small balls. Store in an airtight container in the freezer or fridge! 

*you could use almond butter or peanut butter if you prefer(if you're on a budget peanut butter is the cheapest).

Grain-Free Granola

1/2 cup Almonds
1/2 cup Pecans
1/2 cup Cashews
1/2 cup Tart Cherries
1 tsp Vanilla Extract
1/2 tsp Real Salt
3 tbsp Maple Syrup

Preheat oven to 275F. Mix almonds, pecans, cashews and tart cherries in a food processor or blender. Pulse or gently blend the mixture(I like my granola to have bigger pieces, so I just lightly pulse mine, if you like smaller pieces blender it a little bit more).  Add vanilla extract, real salt and maple syrup and pulse 4-5 more times. Spread mixture over a coated baking sheet and bake for 45 minutes or until slightly golden. Remove and let it cool completely, store in an airtight container!
